INGREDIENTS

5 T flour

1 c milk

1 c sugar

¼ c lemon juice

3 T butter

½ t lemon rind

3 eggs, separated

DIRECTIONS

  1. Cream flour and sugar with butter.

  2. Beat yolks until thick.

  3. Add yolks & milk to flour mix.

  4. Add lemon juice & rind.

  5. Beat egg whites until stiff but not dry.

  6. Fold into batter.

  7. Pour into buttered baking dish.

  8. Put baking dish in pan with 1" hot water.

  9. Bake at 350° 65 min. or until firm.
